It was a beautiful day today and after and after the busy Mother's day event yesterday at the Scrapbook Lounge I found myself Pinterest searching I found a perfect muffin recipe to do a little quiet baking today.

Ingredients:
8 Tbs. (1 stick) unsalted butter, at room temperature
2/3 cup lemon sugar or granulated sugar (please. I used granulated)
2 eggs, separated
1 1/3 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
2 Tbs. poppy seeds
Grated zest of 2 lemons
1/4 tsp. salt
1/2 cup buttermilk
2 Tbs. strained fresh lemon juice
1 tsp. vanilla extract
Directions:
Preheat an oven to 350°F. Grease 10 standard muffin cups with butter or butter-flavored nonstick cooking spray or line with paper liners; fill the unused cups one-third full with water to prevent warping.
In a bowl, using an electric mixer on medium speed, beat together the butter and lemon or granulated sugar until light and fluffy. Add the egg yolks, one at a time, beating well after each addition until blended.
In another bowl, stir together the flour, baking powder, baking soda, poppy seeds, lemon zest and salt. Using the mixer on low speed, add the flour mixture to the butter mixture in 2 additions, alternating with the buttermilk, then the lemon juice and vanilla. Beat just until smooth.
In a large bowl, using the mixer with spotlessly clean beaters on high speed or a balloon whisk, beat the egg whites until they just form soft peaks. Using a large silicone spatula, gently fold the egg whites into the batter until blended.
Spoon the batter into the prepared muffin cups, filling them three-fourths full.
Bake the muffins until golden, dry and springy to the touch, and a toothpick inserted into the center of a muffin comes out clean. 20 to 25 minutes. Transfer the pan to a wire rack and let the muffins cool for 5 minutes. Remove the muffins from the pan and let cool completely. Serve at room temperature with lemon curd. Makes 10 muffins.

Birthday Parties at the Scrapbook Lounge & Looplaloo
Children's parties in Cold Lake just got better. Birthday party planning can be a bit stressful, when you are looking for fun activities for a birthday party, you have found a great location in the Scrapbook Lounge and Looplaloo. You bring the food, we will do the rest! Our staff will design an art project especially selected to match your child’s favorite interest (favorite toys, books, or games) or party theme.

Our parties are two hours long and include an art project designed to your child’s interest (favorite toys, books, or games) or party theme. Parents can add as much decorations you like and bring food to fit the party as well.
How much do your parties cost? How do I pay?
Cost of an art party is $100.00 for up to 12 guests with an addition craft fee (dependant on the craft) of $4.00 - $20.00. A $50 deposit is required within 7 days of confirmation of party date. The remaining total can be made on the day of the party with cash or checks. GUESTS SHOULD DRESS TO MESS!

Spring Tuesday Techniques with Kim
The Scrapbook Lounge
is continuing with Spring Tuesday Techniques. Each week will focuses on a different inking
product and participants will learn amazing new techniques for each
product. Classes include all supplies
and participants will take home 2 projects as well as materials to reference
later. Previous classes we have been playing with alcohol inks and Distress markers. There is only 3 classes left, so don't wait and register today before they are all full.
